Your typical strawberry milkshake; with a tropical twist!
400g (13oz) strawberries, hulls removed
1 x 400ml tinned coconut milk
1 tbsp honey
2 tbsp dessicated coconut
Batida de fresa (which is much more approachable than it sounds) is a milkshake-style, non-alcoholic drink made with juicy strawberries and creamy coconut. Serve it in pretty glasses at a BBQ or simply whip up as a refreshing breakfast smoothie, it’s up to you!
Slice the strawberries in half. Place them in a plastic container or resealable bag and freeze for 2 hours, until frozen but not too solid.
Put the strawberries in a blender and whizz with the coconut milk, honey and desiccated coconut. Divide between chilled glasses and there! You have a healthy, delicious summer refreshment serving 2 long or 4 short drinks at only 273 calories a serving. Lovely.
